Chicken + Potatoes in the Crockpot

I was given a slow cooker for Christmas, which will be hella-useful for Core. In fact, my best friend sent me a recipe that I am sharing with you now sans her permission. I am actually currently cooking it! If it sucks I’ll let you know, but I doubt it could.

You need:- chicken breasts (enough so you have a few days of leftovers for lunches… it’s that good)

- garlic

- salt and pepper

- olive oil

- rosemary

- 1/2 cup chicken broth

- a lemon

- little potatoes (3 for each 1/2 breast serving)

Cut the chicken breasts into 1/2 portions. Crush the garlic with the salt and pepper (I actually did this in the food processor because I am lazy). Rub that mixture into the breasts and brown them in the olive oil in a skillet. When browned, transfer the chicken to the crockpot but leave the pan leavins behind. Add the broth and juice from the lemon to the pan, and turn the heat up to high — cook it enough to work in all the pan deliciousness. Pour all that over the chicken in the crockpot. Toss in the rosemary. Put in the potatoes so they’re like half-submerged in the liquid. Cook on high for 4 hours or on low for 8 hours.

Try it with roasted asparagus!

    GoGo: No problem! My friend said she is going to substitute dill for rosemary next time she tries it - which also sounds delicious and not requiring much culinary prowess.
